I had wondered all day what I'd be making for dinner. Over a cup of coffee sitting at the island chatting with him, it struck me - my potato soup! He also loves potato soup but was planning to go play cards tonight with the other men at the apartment complex.
I've been working on trying to finish up projects around the house before our house guests arrive on Saturday. Some are outside projects that needs to get finished prior to winter so meant I needed to get off my tush and finish them....
So finally around 5:40 I started the soup and by 6:15 I was calling daddy to see if he wanted to come have a bowl before cards... He happily said yes! You see the time frame? That will give you an idea of how fast and easy this soup is to make we were eating by 6:30. The most time consuming part is frying up the bacon (or you could put it in the oven...I just personally like to create bacon grease).
LYNN'S POTATO SOUP RECIPE
Recipe makes about 8 large bowls of soup
2 Large Baking Potatoes
1/2 medium onion
salt, pepper & garlic salt
1/2 stick butter
Fry up the bacon... We like to make it crispy for the soup.
Peel potatoes (I leave a little skin on them..I like it), grate them into your pot and add water enough to cover the potatoes to boil with a little additional. Add butter and the salt, pepper & garlic salt to taste.
Bring to a boil until the potatoes are tender (doesn't take long).
Chop up the onion. Use a little of the bacon grease and cook onions until tender.
Once the potatoes are tender add the bacon (I crunch into small pieces), cooked onions and the light cream. I add enough to turn the soup to a nice whitish color.
I let it simmer for about 15 - 20 minutes.
And, enjoy with a nice slice of buttered bread! YUMMY!

It was such a treat and how lucky am to have a daddy that hand delivers a warm loaf of freshly baked bread...well I say more blessed than lucky!! I think my girls probably ate 5 slices each :)
