I always crave soup during the cold months.. I just love it. I made Taco Soup last night & posted a picture on my instagram and facebook pages. I had loads of people asking for the recipe... I did not take pictures during the process because I honestly didn't think about blogging the recipe...
Let me say this was a super simple & fast recipe... Less than an hour..
My ingredients -
2 lbs ground beef
1 can rotel tomatoes
1 can petite diced tomatoes
1 can diced green chilies
1 can beans of your choice (I used red beans)
1 small diced onion
1 clove minced garlic
taco seasoning (I used Old El Paso packet)
1 can mild green enchilada sauce
salt & pepper to taste
corn chips (I used the tostito catina brand...when I have more time I usually make my own)
I cooked my ground beef until it was completely done. When it was about 3/4 done I added the diced onions & minced garlic and my packet of taco seasoning. Once browned, I added the green chilies, diced tomatoes, and rotel. I then added my green enchilada sauce, beans, 2 - 4 cups of water (depending on how much soup juice you like). I then added a big dollop of sour cream...this you don't want to much of, just enough for flavor. I added salt & pepper to taste.
I brought to a boil for a couple of minutes and then turned the heat down to simmer. I let it simmer for about 30 minutes.
I use the cheese, avocado and chips as garnish. I happen to like all 3 in mine :) I also added a little hot sauce to mine because I like it spicy...
I always like it the next day after it sits overnight and the flavors all marry...yummy. Guess you know what my lunch is going to be today!
*** This is my recipe that I threw together sometime back in the day.. I've seen other taco soup recipes that some add corn to it and other veggies.
